Ingredients
  1. 100g flour
  2. 1 teaspoon baking powder
  3. 75g sugar
  4. 70g butter
  5. 1/4 cup milk
  6. 1 egg
  7. 1 teaspoon vanilla extract

  11. 1/4 cup milk
  12. 1 egg
  13. 150g butter
  14. 1 tablespoon rum or liquor
  15. 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 180C.
  2. Whisk butter and sugar in a bowl.
  3. Beat in an egg.
  4. Stir in vanilla extract.
  5. Add flour mixed with baking powder.
  6. Stir in milk.
  7. Divide the mixture evenly among pans.
  8. Bake for 20-25 minutes. Let the cupcakes cool in pans.
While the cupcakes are in the oven, let’s make our delicious raspberry icing
  1. Beat an egg, sugar and milk in a saucepan and bring to the boil. Stir until the mixture becomes thick, then cool.
  2. Whisk butter (for approx. 5 min) in a bowl until it is white and fluffy, add the egg mixture.
  3. Stir in rum and vanilla extract.
  4. Beat the cream until smooth, add raspberries. Leave in a fridge for an hour.
  5. Pipe the icing over the cool cupcakes and top with the sprinkles and decorate with raspberries
Notes
  1. You can add cocoa powder instead of raspberries to make delicious chocolate cupcakes, your call! In fact, you can experiment with your cupcakes however you want, make banana and coconut, strawberry or pumpkin cupcakes. They will all taste amazing.
